Health Benefits of Chia Seeds
I am sure by now you have heard of this TINY little seeds called Chia seeds. They are highly talked about in the nutrition and weight loss communities, but why? What makes these little seeds so special?
Chia seeds are PACKED with nutrition AND they have very little calories. Chia seeds contain fiber, protein, Omega 3 Fatty Acids, Calcium, Magnesium, and Vitamins B 3&2 among other things! It is recommended that you take in about 3 tablespoons of chia seeds a day to improve your health, and they are actually proven to help you lose weight due to their high fat/protein content! Want to know the good news? They have basically zero taste. So you can add them to smoothies, jams, yogurt, cereal, really whatever you want! Since they don’t have a strong taste you can add them to whatever recipe you wish to boost the nutritional value. That feels like a win-win to me!
Not only do they contain tons of vitamins and minerals, they are high in antioxidants. Antioxidants help reduce cell damage and reduces your risk of heart disease, cancer, and many other diseases.
Healthy AND Tasty
This jam is packed with super foods that will improve your overall health BUT it also tastes GREAT! If you didn’t know better your wouldn’t think it was healthy! I enjoy trying to create recipes that taste just as good as the sugar loaded options so you can get that guilty pleasure without ruining your diet!
Instead of using traditional granulated sugar I used honey in this recipe to sweeten the jam naturally. Not to mention honey has it’s own health benefits. Honey boosts your immunity, contains vitamins and antioxidants, and it is the natural, healthier alternative to using sugar. I love the unique taste that the honey gives this jam!
I do not think this recipe can get any easier. All you need to do is prepare your strawberries by cleaning and giving them a rough chop. Bring them to a boil over medium heat for 5-10 minutes until they start to break down, and then add in your honey and other ingredients and allow the mixture to cool and thicken! Easy Peasy!
Add the jam to a mason jar and store in the fridge for up to a week. Enjoy over toast, ice cream, or add to my chia pudding to add a little extra flavor!
- 4 cups fresh strawberries (diced)
- 1 Tbsp. honey or maple syrup
- ¼ cup chia seeds
- Juice of ½ a lemon
- Put the strawberries into a saucepan over medium heat.
- Cook for 5-10 minutes until the strawberries break down, become liquidly and begin to bubble.
- Remove from heat and use a potato masher to mash the berries. If you prefer a jam with chunks of fruit don’t mash it too much.
- Stir in the honey, lemon juice and chia seeds.
- Let stand 10 minutes until thickened.
- Transfer the jam into a sealable glass jar. The jam will thicken further as it cools.
- Keep in the refrigerator for up to one week.
